There are two primary varieties of cinnamon spice consumed today; Ceylon cinnamon and Cassia. Ceylon cinnamon (Cinamomum zylanicum), is a plant native to the island of Sri Lanka. The name "Ceylon" is derived from a former name of Sri Lanka. Ceylon cinnamon has developed a reputation globally for its unique quality, colour and taste.   • Firstly dried in the sun and thereafter dried in shade for a period of time

Harvesting
